Smoking peppers and various foods is a passion of Tim’s (Adoboloco co-founder). All of the smoked peppers in our sauces are smoked in-house by Tim & Xander Parsons. We never use liquid smoke, canned smoked peppers or additives to fake that authentic flavour; you can taste the difference. It’s all-natural hardwood smoked, low and slow in a custom-designed and built pepper smoker/roaster. The original smoker Tim built for peppers was made out of a 55-gallon drum, then scaled to an in-ground concrete smoke house under a wood-burning oven he built. Now we’ve scaled up to a custom smoker we designed and made just for our chilli pepper smoking.
